Our direct, confidential Client is seeking an experienced, hands-on Restaurant General Manager to lead day-to-day operations in a fast-paced, high-volume, casino-regulated environment in Las Vegas. This is an exempt, on-site leadership role reporting to the Director of Food & Beverage.


About the role

We're hiring a Restaurant General Manager to oversee front-of-house, back-of-house, and bar operations while driving guest satisfaction, team performance, compliance, and profitability. You'll set the pace on service standards, coach leaders and hourly staff, and partner cross-functionally to deliver a seamless overall casino guest experience.


What you'll do

  • Lead daily operations across FOH/BOH/bar, ensuring smooth execution during peak and off-peak periods.
  • Maintain consistent standards for quality, hospitality, speed of service, and cleanliness while meeting health, safety, liquor, and casino regulatory requirements.
  • Hire, train, schedule, and develop a diverse team (chefs, servers, bartenders, and support), including coaching, performance management, and succession planning.
  • Own the guest experience end-to-end; resolve complaints professionally and implement initiatives that build loyalty and engagement (events, promotions, special offerings).
  • Manage budgets and key cost drivers (labor, food, inventory); review financials to identify trends, improve profitability, and hit targets.
  • Collaborate with other casino departments to support property-wide events, promotions, and VIP/guest needs.


Required

  • Extensive food & beverage knowledge across both front and back of house.
  • 5+ years in a leadership role within a high-volume restaurant/hospitality setting.
  • Experience working in a regulated environment (casino or gaming property).
  • Proven ability to manage operations, financials, and performance at scale.
  • Strong people leadership across diverse teams and backgrounds; positive, guest-first mindset.
  • Strong communication and administrative skills.
  • Must be 21+.
  • Able to pass background check and drug test.


Licensing/certifications (required/obtainable)

  • Ability to obtain Nevada Health Card (Food Handler), TAM Card (alcohol awareness), and gaming-related work credentials as required for casino/hospitality roles.


Preferred

  • Bilingual English/Spanish.
  • Culinary degree or equivalent experience.
  • Prior casino restaurant leadership experience.


Physical requirements

  • Ability to work indoors and move throughout the property; lift, bend/kneel; outdoor work less than 25% of the time.
  • Ability to work in smoky, noisy, hot/cold, or humid environments.
  • Ability to stand/walk for extended periods and lift up to 50 lbs with or without assistance.
